I have never worked on google docs, so i cannot comment on that.
However, the wiki didn't work well for us...
We tried to use the wiki, and I make the terrible decision to use MediaWiki for that. (my …. what a terrible wiki system is that!!)
At some point I was spending more time weeding out spam from the wiki then that there was usefull information, so now
we have a registration system, unfortunately the system doesn't send me any emails :( media wiki has a endless number of configurations,
but unfortunately you keep hacking PHP together until it works.
Additionally, there aren't any good systems to generate a HTML/PDF from the wiki without again writing endless lines of PHP
codes to make it work.
So, I am all for using Google docs and it would even be better if we could generate HTML from it. The reason is that
we (used??) to have a lot of people from Africa where stable internet isn't available and there only option for a manual
is having this part of the download using the help system.
At least I would include teh PDF that can be opened using the default PDF viewer using the help button.

If original author (Bob) wishes to develop this guide / manual in collaborative manner, then there are many tools at our disposal. Google Doc (Google Drive) may be one option. We can upload doc file there, any one or invited (restricted) persons may be allowed to add / edit content. It saves different version and one can roll back also.
Document may be exported to any format odt / pdf.
Even one can comment and have discussion there.
Wiki may be other option.
